2 handful spinach
1 chopped tomato
Leftover brussels sprout (or stir fry beforehand with onion and garlica)
1 half fresh chili pepper
1 tablespoon of pumpkin seeds
a splash of olive oil
5 leaves of basil
half chopped onion
After cleaning the Brussels sprout, fry them with olive oil, garlic, tomato, onions, and pepper to the texture you prefer. I like them to still be crunchy. You can beat your egg beforehand or just add without beating. That is what I do. Low or high heat depends on how well cooked your sprouts are. Let it simmer for a while.
Cover your plate with the raw spinach and layer your omelet onto the spinach.
A glass of coconut water or iced green tea (self-made) is amazing with this lunch.
