Spinach and tomato salad with avocado and crackers
2 handful spinach
6 green olives in olive oil and garlic
1.5 tablespoon cottage cheese
2 slices of beetroot
1 tablespoon of pumpkin seeds
1 tablespoon of sunflower seeds
2 low carb crackers
1 ripe avocado
Cut the raw spinach into small ribbons or leave the leaves whole. Slice the tomato into blocks. You can also cut up the olives or leave them nice and whole. Cut the beetroot into smaller pieces. Mix it all in a bowl with the cottage cheese.
Slice the avocado and layer the slices on the crackers. Of course you can add the avocado to the salad and then use it all on the crackers. A glass of coconut water is amazing with this lunch! Bon apetite!
Also easy to make and take with you if you have to be on the go.
